Crockpot Shredded Chicken
This recipe is the base for two meals: Chicken & Spinach Enchurritos and Chicken and Vegetable Soup. Both are outstanding and you can find the links at the bottom of this post.
This saves time and money. Both recipes are outstanding, but this shredded chicken is so versatile it can be used anytime you need shredded chicken without having to purchase a rotisserie chicken or boil it - yuck! It's so flavorful, you could just eat it on top of a salad. Enjoy!
Happy Cooking!
Sarah
Crockpot Shredded Chicken:
3 boneless skinless chicken breasts, about 1-1.5 lbs depending on the size
2-3 stalks of celery
2 cups of chicken stock (stock not broth - stock has much more flavor. I buy the low-sodium organic stock when it is on sale.)
1/4 tsp each onion powder, garlic powder, salt and pepper
Place the celery on the bottom of the crockpot and the chicken breasts on top. Pour the chicken stock around the chicken and sprinkle the chicken breasts with the seasonings.
Cook on high for 4 hours. Shred the chicken for your use. This recipe can be used anytime you need shredded chicken for another recipe. Perfectly simple and delicious.

BBQ Turkey Meatloaf
Can I just say yummy? This was an awesome recipe that I can't take credit for. I have to modify the recipe slightly because I made a smaller meatloaf, but this is Pat and Gina Neely's recipe. Everyone loved it! My 13 month old ate 2 full pieces!!! Crazy! Kept asking for more! And my husband took one bite and said, "Wow! This is good. This is turkey?". Love cooking a meal that everyone enjoys! It truly brings me joy. Tonight I served this with a large green salad and homemade sweet potato "fries", baked with only a couple tablespoons of olive oil and some salt & pepper. Another recipe that will make my rotation.
Happy Cooking!
Sarah
BBQ Turkey Meatloaf
modified from Pat and Gina Neely's recipe: http://www.foodnetwork.com/recipes/neelys/bbq-turkey-meatloaf-recipe/index.html
20 oz of lean ground turkey
1 tsp BBQ seasoning (I used Dinasaur BBQ Cajun Seasoning - a famous BBQ joint based in Syracuse, NY but any should work)
1/2 tsp Old Bay seasoning
1 T plus 1 tsp soy sauce
1 tsp worchestershire sauce
1 egg, beaten
1/3 cup of your favorite BBQ sauce, plus 3 T for the top while baking (there is a recipe for homemade BBQ sauce in the link above, but I just used the store bought kind I found on sale)
1/2 cup of bread crumbs (I used seasoned breadcrumbs because that's what I had)
1 T olive oil
1 small onion, chopped
1 clove of garlic, minced
Preheat your oven to 350 degrees and spray a loaf pan with cooking spray.
Meanwhile, in a pan over medium-high heat, saute the onion in olive oil until translucent. Add the garlic and stir for 1 minute. Remove from the heat and allow to cool.
In a large bowl, combine the BBQ seasoning, Old Bay, soy sauce, worchestershire, egg, and BBQ sauce until well incorporated. Add the cooled onion/garlic mixture, the turkey, and the bread crumbs. Mix with your hands (we used rubber gloves) until combined. My toddler loved this part! He got to "squish it together".
Pour the mixture into the prepared loaf pan and spread evenly. Top with 3 T of BBQ sauce. Bake at 350 degrees for 1 hour. Allow to sit for 10 minutes before slicing.
Serve with your favorite meatloaf sides. Tonight it was sweet potato "fries" and green salad. Yummy! Enjoy!
Sweet Potato "Fries"
4 medium sized sweet potatoes, peeled and cut into desired french fry shape
2-4 T of olive oil
1/2 tsp of salt or more to taste
Spray a baking sheet with cooking spray. Toss the potatoes with olive oil an salt. Lay them onto the baking sheet in a single layer. Bake at 400 for 30-40 minutes or until tender (depending on how thick your "Fries" are) and turn them half way through the cooking time. Enjoy!

Chicken Vegetable Soup
The second dish from 1 batch of crockpot chicken breasts, my kid's favorite soup that he requests to take for lunch at school. My husband and I love this too on a cold rainy day. It's the ultimate comfort food - chicken noodle soup, only this has the volume turned up with some spinach for extra nutrition. Plus, who wants to make homemade stock with a whole chicken???? Yuck! That means lots of extra fat that you have to try to skim off and twice the work. This is such a quick soup to make, it doesn't even make sense to buy that stuff in a can. Try it - you'll never buy canned soup again!!!
Happy Cooking!

So first, the chicken that leads to an amazing soup...
Crockpot Shredded Chicken:
3 boneless skinless chicken breasts, about 1-1.5 lbs depending on the size
2-3 stalks of celery
2 cups of chicken stock (I buy low-sodium, organic when it's on sale. Make sure it is stock, not broth. Stock has so much more flavor.)
Save the cooking liquid as the base of any soup. The flavor will be quite concentrated, so you will need to add water (see the recipe that follows for Chicken Vegetable Soup). This recipe can be used anytime you need shredded chicken for another recipe. Perfectly simple and delicious.
And now for the soup...perfect comfort food, whether you are sick, cold, or just want a one pot healthy meal for your family. I just realized I don't have that many pictures - I must have been concentrating on the enchuritto recipe.
Chicken Vegetable Soup
1 chicken breast, diced/shredded (from the recipe above)
the cooking liquid from the shredded chicken recipe above (discard the celery stalks)
2 cups of water
1 T olive oil
2 T chopped onion
2 stalk on celery, diced
1 large carrot, diced
1/2-3/4 cup of frozen spinach (or even more if you prefer and your children don't mind)
1/2 cup ditalini pasta, or any other small pasta, uncooked
In a large pot, heat 1 T olive oil over medium heat. Cook the onion, celery, and carrot until soft, about 10 minutes, stirring occasionally to prevent burning. Add the frozen spinach and stir frequently until melted and heated through, 2-3 minutes.
Add the cooking liquid from the chicken and the water. Increase the heat to medium-high and bring to a boil. Add the pasta and cook for 10-15 minutes or until pasta is tender. Add the diced/shredded chicken and stir. Turn off the heat and serve. Feel free to add salt and pepper to taste. I don't add any for my children, but I prefer some. Also, feel free to substitute or add any vegetables that your children love. Soup is a great way to sneak in all the food groups. Enjoy!

Chicken and Spinach Enchurittos
I know I've said it before, but we love Mexican food!!!
So tonight I made 2 meals out of one crockpot chicken recipe. I'm going to share the enchuritto recipe on this post and tomorrow I'll post about the soup, a favorite of the kids.
(Update: here is the link to the soup http://deliciouslydomesticdining.blogspot.com/2013/03/chicken-vegetable-soup.html)
This recipe was completely made up as I went along and we LOVED it! It is called an enchuritto because its not quite an enchilada, no corn tortillas; and its not quite a burrito either because I made the filling a little wet and its smothered in enchilada sauce. A healthier Tex-Mex dish, the only cheese being 1/2 cup sprinkled over all four enchurittos.
So for now, definitely give this one a try and let me know what you think. I'm definitely making this again!
Happy Cooking!

Chicken and Spinach Enchurittos
2 chicken breasts, cooked and shredded (crockpot recipe to follow)
1 T olive oil
1 medium onion, chopped
1 cup of frozen spinach
2 T light cream cheese
1/2 cup salsa
1 T taco seasoning (homemade - recipe also below)
4 high fiber, whole wheat tortillas
1/2 cup finely shredded reduced fat cheese
1 8 oz pkg of enchilada sauce (choose a sauce without MSG, partially hydrogenated oils, my personal favorite is below- the flavor is like homemade and its healthy!)
Start by sauteing the onion in 1 tablespoon of olive oil over medium heat until cooked all the way through.
Add the frozen spinach and cook until heated through.
Add the light cream cheese and stir it into the other ingredients as it melts, creating a smooth creamy veggie base to our filling.
Now add the salsa and taco seasoning, stirring until thoroughly combined. Cook long enough to heat all the way through, the mixture should come up to a little simmer.
Now for the shredded chicken. Take 2 boneless, skinless chicken breasts cooked an shredded and add them to our veggie mixture. Stir until well incorporated and set aside.
Spray a 9x9 inch pan with cooking spray to prevent the enchurittos from sticking. Divide the mixture evenly between 4 tortillas, and spread as pictured below.
Roll them up and place them in the baking pan.
Top with the enchilada sauce and cheese. Bake at 350 for 20 minutes, or until hot and bubbly. So yummy!!! Enjoy!

Garlic and Citrus Roasted Chicken
This chicken was AMAZING! I'm so happy I finally decided to make a roasted chicken at home instead of buying one from the store. Part of this decision was because the chicken was finally cheap enough to make it worth it for me to cook one at home. So much of the time it costs more to buy a raw whole chicken than it does to buy one already roasted for me.
So it was settled - I'm going to try roasting my own chicken. I wanted the chicken to have a mojo flavor, from citrus and garlic. My basting liquid was right on! The best part of the meal was the pan sauce I made from the cooking juices, the rest of the basting liquid, and a little white wine. The entire family loved the chicken. I served it with roasted potatoes and asparagus, cooked one at a time while the chicken was roasting. My toddler helped me make it (I have a box of surgical gloves that I use when handling raw meat or messy food prep so he was able to safely help out). Highly recommend this recipe! Enjoy!
Happy Cooking!
Garlic and Citrus Roasted Chicken
7 lb whole chicken
3 T olive oil
1 lemon, juiced, flesh & rind quartered and set aside for cavity
1/2 orange, juiced, flesh & rind quartered and set aside for cavity
2 T of parsley, chopped, plus a bunch to stuff in cavity
1 tsp salt
1/2 tsp pepper
3 cloves of garlic, minced, plus 1 whole head of garlic cut in half for cavity
chicken broth or stock
2 T white wine
In a small bowl prepare the basting liquid by combining the lemon juice, orange juice, salt, pepper, parsley, and minced garlic.
Then take the chicken (gizzards removed) and stuff the cavity with
the orange and lemon wedges (left over after juicing them), the garlic
head pieces, and some parsley (stems and all). Pack the cavity as much
as you can and then place the chicken in the roasting pan.
I do not own a roasting pan, so I used my dutch oven. I recommend using any pan that you can then use on the stove top afterwards to deglaze and create the most delicious pan sauce you've ever tasted.
Now take some of the basting liquid and rub it all over the outside of the chicken. I even took the time to rub some under the skin, directly on the breast meat. This makes a big difference in the flavor and moisture of the breast meat.
The last step before roasting is to pour enough chicken stock in the pan so that the drippings don't burn on the bottom of the pan while cooking. I poured enough around the chicken so that it came up about 1 inch high. This will also catch all the flavors from the basting liquid and help us to build the sauce later.
Bake the chicken at 350 degrees for 20 minutes per pound or until the internal temperature is 170.
Base the chicken with more of the citrus/garlic concoction every 30 minutes while it cooks. This keeps the chicken juicy while building layers of flavor.
My chicken had a thermometer that popped when the chicken was done, but I double checked with my meat thermometer. Don't want any food poisoning!
Remove the chicken from the pan and place on a cutting board. Allow the chicken to rest for at least 10 minutes before carving. Pour the cooking liquid and drippings into a fat separator, created to pour out the cooking liquid as the fat stays on the surface. If you don't have one then use a clear measuring cup that you could easily see the fat to skim it off with a spoon.
Pour only the juices, not the fat, back into the cooking pot over medium-high heat on the stove. Add 2 T of white wine and a pinch of salt. Allow the sauce to come to a boil and reduce for about 3-5 minutes.
Carve the chicken and serve with the pan sauce. So incredibly delicious!!! Restaurant quality for sure. It really was perfectly cooked - the breast meat was juicy and the flavor was outstanding!
Here are some pictures of the sides I served with the chicken. Enjoy!

Crockpot Pork Osso Buco with Mushroom Risotto and Sautéed Greens
Every time I make pork, I wonder why I don't make it more often. So good!!! And this recipe is no exception! Its perfect for a special dinner at home, and certain to impress any guests if you're entertaining.
I spent the afternoon researching osso buco recipes and finally came up with my own version for the crockpot. Huge success! Hubby went back for seconds and thirds, both kids ate it up, and we have lots of leftovers to enjoy. The pork was awesome with the risotto, but it would be great with polenta or with more roasted veggies for a no-carb option. Risotto does require some attention, so be sure to have another adult present to watch your children while you stir and stir. It's only 20-30 minutes and totally worth it!!!
Below you will find the recipes for both the crockpot pork osso buco and the mushroom risotto. Give these recipes a try - you won't be disappointed.

Crockpot Pork Osso Buco
3.5-4 lb pork butt roast, bone-in
salt & pepper
2 carrots, sliced
3 stalks of celery, sliced
1 large onion, chopped
1 sprig of fresh thyme
1/4 tsp dried rosemary (I would have used 1 sprig of fresh but didn't have any)
1 bay leaf
3 cups of chicken stock
1 cup of dry white wine
2 T tomato paste
Layer the vegetables on the bottom of the crockpot, as pictured.
Add the herbs, tomato pasta, stock and wine. Sprinkle the pork roast with salt & pepper all over the top and sides. Add to the crockpot. Cover and cook on high for 6 hours.
Take the pork out, probably in pieces as seen below, because it is just falling apart. Yummy!
Discard any fat and the bone. Shred pork into chunks and place on a serving platter.
Using a slotted spoon, scoop out the vegetables and place them on top of the pork. If you have a fat separator, pour the liquid into the contraption to enjoy more of the cooking liquid on top of your pork. Otherwise, you can try to skim some of the fat off the top and do the same. We found that with the creamy risotto, the cooking liquid was not necessary.
Serve each person with a scoop or two of risotto, sauteed greens on top, then pork on top of that. So delicious! A must try!
Mushroom Risotto
2 cups of dried mushrooms (I used some from a package I buy at Bj's wholesale - the picture of the box is below), rehydrated and 2-3 cups of the soaking liquid reserved as mushroom stock for the risotto
3 cups of chicken stock (If you don't use the mushrooms stock, then you will need 2-3 additional cups of chicken stock)
1 T butter
1 T olive oil
1 small onion, chopped
1 glove of garlic, minced
1 1/2 cups of arborio rice (no other rice will work - arborio is specially made for risotto)
1/2 cup dry white wine (I used sauvignon blanc because that's what I like to drink)
2 T parmesan cheese (it tastes even better with more cheese, so if you don't care about the extra calories, then add 1/2 cup instead)
salt and pepper to taste
To rehydrate the mushrooms, put them in a sauce pan with 3 cups of water and bring to a boil. turn the heat off, cover and let steep for 45 minutes to an hour. Drain, reserving the liquid as mushroom stock for the risotto. Coarsely chop the mushrooms and set aside. Below is the picture of the box of mushrooms I used. If you can't find a dried blend, you can always buy an assortment of fresh mushrooms and saute them in advance. You'll just need to have more chicken or vegetable stock on hand.
Before beginning the risotto, heat the stock that you will be using in a saucepan and keep it on the stove over low heat. You want to add hot stock to the risotto as you make it.
In a large saucepan over medium-high heat, melt the butter until it becomes frothy and add the olive oil. (The olive oil has a higher burning point than butter, so the butter will not burn). Add the onions and saute until translucent.
Add the garlic and saute up to one minute more, being careful not to burn it. Add the rice and toss to coat in the oil and butter. Then add the wine and stir until the rice has absorbed the wine.
Add the stock a little at a time, just until you cover the rice. Stir frequently until most is absorbed. See the photos below.
Continue adding the stock slowly - it will take about 5-7 cycles of adding liquid, stirring occasionally until absorbed, then adding more. The entire process should take 20-30 minutes, until the rice is aldente and most of the liquid has been absorbed. Add the mushrooms, parmesan cheese, and salt and pepper to taste. (I was surprised at the amount of salt I needed to add at the end, seeing as though I did not salt it as I cooked). So yummy! You could have this as a dish all on its own for meatless Monday! Enjoy!
I spent the afternoon researching osso buco recipes and finally came up with my own version for the crockpot. Huge success! Hubby went back for seconds and thirds, both kids ate it up, and we have lots of leftovers to enjoy.
